Gaetano Trovato, together with his closest collaborators, has created BIS – Osteria Italiana Contemporanea, a place where guests can embark on a journey across Italy, exploring its finest ingredients through reimagined traditional recipes and a celebration of Italian culinary heritage.

From aperitivo hour onwards, BIS welcomes guests to its terrace and panoramic dining room, both overlooking the breathtaking Tuscan landscape. Here, simplicity and quality take center stage. The only labels we care about are those on the exceptional ingredients we select—our approach to cuisine is as innovative as it is genuine.
